Quintel (aka Quinoa Lentil) Salad




Ingredients:
  • 1 cup of cooked french (or brown) lentils
  • 1 cup of cooked quinoa
  • 1/4 cup of garlic greens (or chives), chopped
  • 1 cup of cooked artichoke hearts, cut lengthwise into quarters
  • 1 small tomato, sliced
  • salt
  • ground pepper

Directions:
  • Combine all ingredients in a salad bowl
  • Enjoy hot or at room temperature with olive or flax oil
